On the road to success: Restaurant "Roka" in Dubai

Since its opening last year, "Roka" has established itself as a culinary hotspot in the luxury metropolis of Dubai. The fusion of "Robatayaki" cuisine with western influences and the contemporary design concept leaves nothing to be desired. L'Officiel Austria author Lisa Ruis reports.

Expansion of a successful recipe: The idea behind "Roka" is the Japanese-influenced It restaurant "Zuma" in London, famous for its elite clientele
and the dishes that are specially prepared there on a "Robata" grill. Rainer Becker, the man behind the contemporary concept, saw the potential of the "Robata" grill, which is indispensable in traditional "Robatayaki" cuisine, and drew inspiration from the equally traditional "Irori" grill. His vision of uniting different cultures and tastes on the traditional Japanese grill became reality in the "Roka".

Tradition and innovation
By combining traditional Japanese dishes with spices from different cultures and adding a modern western touch, "Roka" has unsurprisingly become a worldwide gastronomic phenomenon in Dubai. The restaurant is located in the ME Dubai Hotel in the heart of the city's vibrant Business Bay. The industrial-looking interior was designed by Noriyoshi Muramatsu and also relies on fusion: concrete, wood, metal, and leather create a modern flair that does not lack a hospitable atmosphere.

Unique taste
Considering its reputation, it is no surprise that the dishes at "Roka" are prepared with care and attention to detail. The gourmet menus are highly recommended: the Seasonal Tasting Menu and the Premium Tasting Menu. If the temperatures permit, it is best to dine on the terrace - surrounded by green plants and with a view of the skyline, the dinner becomes a sensory experience for all the senses.
