Dessert wine is characterised by its sweet taste. This is why it is often served with dessert or cheese after dinner. If you are looking for new creations with a unique taste, Berlin is the place to be. The company Universe-CFC offers two innovative flavours: Chardomell® and Merlscho®. The name gives the flavour away: a mild Chardonnay with a caramel taste and a smooth Merlot with a chocolate taste.
Chardonnay is light and aromatic. This makes it a perfect match for caramel and desserts such as crème brûlée, crema catalana or tiramisu. Chardomell® is best served at 12° C.
The Merlot has a soft taste, low tannin content and a pleasant acidity. The combination with chocolate creates a unique taste experience that goes well with dark fruits such as cherries, blackberries or plums. Merlscho® is best served at a temperature of 13°.
The label promises exciting moments of pleasure that appeal to all the senses. The symbiosis of wine and sweetness hits the mark. Two pleasures complement each other perfectly. The wine comes from German wine-growing regions and the ingredients are exclusively selected.
From her parents' wine cellar to a start-up company
23-year-old Cheyenne, Countess of Thun and Hohenstein Veit, is the brains behind the Sin with Mind label and CEO of Universe-CFC. The company's name comes from her first name, Cheyenne Françoise Charleen. Universe reflects her cosmos.

At the age of 18, Cheyenne von Thun realised that the wine her father drank was far too bitter and did not meet her expectations. Determined to create her own sweet version, she set out on a quest. With the support of her family and a friend, she tried countless variations of wine varieties with chocolate, caramel, honey and fruit. The result was Chardomell® and Merlscho®.
But it wasn't just the wine that had to be exceptional, the design also had to be extravagant and aesthetically pleasing. The 0.5-litre bottles are made of matt black glass and glow under UV light. The exclusive gift box contains one bottle of each wine and a black eye mask, the brand's logo, symbolising sin and seduction.
Sin with Mind wins award
Immediately after their launch, the two wine-based mixed drinks received an award from gourmet magazine Selection. They were awarded 3 stars and a silver medal. All the more reason for Cheyenne von Thun to continue working on her creations.
