ISTR: The most famous and above all - the best - Oyster Bar in Paris

If the French capital is known for its legendary restaurants, the typical Parisian brasseries play an important role. Against this background, a new generation of hotspots specializing in seafood is emerging. The ISTR oyster bar is at the top of the list.

In the Marais district of Paris, ISTR - which means "oyster" in Breton and pronounced as it reads - stands out as the new place to go to absolutely know whether you love seafood - and oysters, of course - or not. Far from the traditional codes of well-known fish dishes, the restaurant renews the genre with a simple but refined menu consisting of typical dishes and seasonal creations.

Co-founded in 2016 by Philippe Morin, with chef Manuele Rossi in the kitchen, ISTR stands out especially this summer with a new offering: the ISTR EXPERIENCE. Just like the restaurant's positioning, there is nothing else like it within the genre of the classic seafood palette - and that is exactly what makes ISTR such a successful concept. Guests here have the opportunity to sample the house's expertise, far from the classic codes, such as oysters with lemon and shallots. 

The originality of the ISTR Experience is based on the principle of offering a wide range of seafood with atypically explosive and colorful seasonings with unique sauces and condiments. For example, at ISTR you will find green harissa with honey served with fine N3 La Kermancy oysters or a dulce seaweed jam on pineapple cucumber placed on a special N3 Black Pearl Oyster.
